Description Pepsin is secreted by the chief cells of the gastric mucosa and can break down proteins in food into peptides and amino acids such as tyrosine and phenylalanine. Its activity measurement can be used to distinguish between neurogenic hypochlorhydria and gastric hypochlorhydria. A decrease in pepsin secretion may also occur during conditions such as chronic gastritis, chronic gastric dilatation, and chronic duodenitis.
Application Pepsin can catalyze the hydrolysis of hemoglobin to produce tyrosine, and the product has a characteristic absorption peak at 275 nm, and the activity of pepsin can be characterized by changes in absorbance.
