Description Neutral proteases (NP) are a class of proteases that act on protein peptide bonds in a neutral environment, hydrolyzing proteins into amino acids, peptides, and free amino acids. Due to their safety, non-toxicity, strong hydrolytic capacity, broad application range, and mild reaction conditions, they have widespread applications in the food industry, dairy processing, feed, cosmetics, and nutritional supplements.
Application Neutral protease can catalyze the hydrolysis of casein to produce tyrosine under neutral conditions. Tyrosine can reduce phosphomolybdate compounds to form tungsten blue under alkaline conditions. The product has a characteristic absorption peak at 680 nm, and the activity of neutral protease can be characterized by changes in absorbance.
