Description Neutral protease (NP) is a type of protease that acts on protein peptide bonds in a neutral environment, hydrolyzing proteins into amino acids, peptides, and free amino acids. Due to its safety, non-toxicity, strong hydrolysis capability, broad application range, and mild reaction conditions, it has widespread applications in the food industry, dairy processing, feed production, cosmetics, and nutritional supplements.
Application Neutral protease can catalyze the hydrolysis of casein to produce tyrosine under neutral conditions. Tyrosine can reduce phosphomolybdate compounds to form tungsten blue under alkaline conditions. The product has a characteristic absorption peak at 680 nm, and the activity of neutral protease can be characterized by changes in absorbance.
