Description Alkaline protease (AKP) belongs to the serine protease class of endopeptidases. It acts on peptide bonds in an alkaline environment to hydrolyze proteins into amino acids, peptides, and free amino acids. It can also hydrolyze ester bonds, amide bonds, and possesses transesterification and transpeptidation functions. It has widespread applications in the enzyme detergent industry, food processing, brewing, pharmaceuticals, and leather processing.
Application Alkaline protease can catalyze the hydrolysis of casein to produce tyrosine under alkaline conditions. Tyrosine can reduce phosphomolybdate compounds to form tungsten blue under alkaline conditions. The product has a characteristic absorption peak at 680 nm, and the activity of alkaline protease can be characterized by changes in absorbance.
