| Application | Acidic proteases can catalyze the hydrolysis of casein to produce tyrosine under acidic conditions. Tyrosine can reduce phosphomolybdate compounds to form tungsten blue under alkaline conditions. The product has a characteristic absorption peak at 680 nm, and the activity of the acidic protease can be characterized by changes in absorbance. |
