Description Acidic proteases (ACP) are a class of proteases that act on protein peptide bonds in acidic environments, hydrolyzing proteins into amino acids, peptides, and free amino acids. Acidic proteases can effectively hydrolyze proteins under low pH conditions and have a wide range of applications in alcohol fermentation, food processing, brewing, feed additives, leather processing, and other fields.
Application Acidic proteases can catalyze the hydrolysis of casein to produce tyrosine under acidic conditions. Tyrosine can reduce phosphomolybdate compounds to form tungsten blue under alkaline conditions. The product has a characteristic absorption peak at 680 nm, and the activity of the acidic protease can be characterized by changes in absorbance.
