| Detection Principle | Serum amylase catalyzes the hydrolysis of the α-1,4 glycosidic bond in the starch molecule to produce glucose, maltose, and dextrin, etc. Iodine can combine with unhydrolyzed starch to form a complex, and the product has a characteristic absorption peak at 570 nm, which can be characterized by the change of absorbance value. |

| Note | Absorbance measurement should be completed within 15 min after the color development is completed, if more samples are detected, it is recommended to perform the measurement in batches; if A measurement is outside the linear range of the standard absorbance value: higher than the highest value, it is recommended to dilute the crude enzyme solution appropriately and then perform the measurement; lower than the lowest value, it is recommended to appropriately prolong the enzyme reaction time or increase the sample volume and then perform the measurement, and the calculation is modified accordingly. |
