| Detection Principle | Angiotensin-converting enzyme catalyzes the hydrolysis of the substrate N-[3-(2-furyl)acryloyl]-L-phenylalanyl-glycyl-glycyl-glycine (FAPGG) to produce furanylacryloyl-L-phenylalanine (FAP) and bis-glycyl-glycyl-glycine peptide (GG), and FAPGG has a characteristic peak at 340 nm, which is characterized by a change of absorbance value. |

| Note | Accurately complete the absorbance measurement at the specified time points to ensure the accuracy and reproducibility of the experimental results; if A1 is greater than 1.2 or ΔA is greater than 0.4, it is recommended that the crude enzyme solution be appropriately diluted with Reagent I before measurement; if ΔA is less than 0.02, it is recommended that the enzyme reaction time be appropriately prolonged or the sample volume be increased before measurement, and the calculations should be modified accordingly. |
