| Product Introduction | Invertase (Ivr) is a crucial enzyme in sucrose metabolism of higher plants, catalyzing the irreversible hydrolysis of sucrose into fructose and glucose. Based on its optimal pH, invertase is classified into two types: acid invertase (AI) and neutral invertase (NI). Acid invertase (AI) is primarily located in vacuoles or apoplastic spaces and functions optimally under acidic conditions (pH 4.5–5.0). It plays a key role in regulating sucrose utilization within vacuoles and influences sugar accumulation during fruit development. The activity of AI can be quantified through a colorimetric method: the enzyme catalyzes the breakdown of sucrose into reducing sugars, which then react with 3,5-dinitrosalicylic acid (DNS) to form a reddish-brown product. This compound exhibits a characteristic absorption peak at 540 nm. Within a defined concentration range, the rate of increase in absorbance at 540 nm is directly proportional to AI activity, allowing accurate enzymatic assessment. |
