Product Introduction Pectin is a key structural component of the primary cell wall and middle lamella in plants, found abundantly in fruits, roots, and leaves. It exists primarily in insoluble forms like protopectin, which is bound to cellulose and metal ions. As fruits and vegetables ripen, protopectin is converted into water-soluble pectin, leading to tissue softening and reduced firmness.

This assay kit is designed to quantify this water-soluble pectin (WSP) content. The method involves extracting WSP and then employing the carbazole colorimetric principle for analysis. The pectin is hydrolyzed into galacturonic acid, which reacts with carbazole in a concentrated sulfuric acid medium to form a purple-red product. This product exhibits a maximum absorption peak at 530nm, and its color intensity is directly proportional to the pectin concentration, allowing for accurate determination of soluble pectin content.
